Even a good knife will lose some of its sharpness with time. A sharpening steel (honing steel) is a rod that has a roughly ground surface that straightens the fine edge of the knife blade. To be effective, it is important that the sharpening steel is used on a regular basis and with an accurate angle. It is also important that the hardness of the sharpening steel exceed the hardness of the knife blade. A neglected knife that is too dull cannot be repaired through honing and must be re-sharpened.
